Orange You Glad It’s A Chicken Recipe

We love doing food experients in our house.  Remember that one time we tried to be vegetarian for a week?  Well, the experiment we are trying this month is fool proof.  31 days of Asian dinners.  I am 11 days in and batting… well 11.

We have had Vietnamese Spring Rolls, Pho, Lemongrass Chicken, and Sesame Ginger Noodles just to name a few.  And of course we have had sushi… can’t skip the sushi.  And yup, I have been making the meals from scratch.  Even all the sauces.  Why?  Because I am trying to keep the frying and sugar to a minimum and still enjoy our favorite Asian meals.

Tonight, errrrr, last night I made Orange Chicken.  It is definitely a go to if we ever hit up Panda Express.  The slight modifications made it a little more healthy but still just as tasty.  I was able to get a great crunch to the chicken even though I baked it.  And the sauce couldn’t tell I used Agave instead of sugar.

Healthier Version of Panda Express Orange Chicken
Ingredients
  • Chicken-
  • 4-5 chicken breast cut up into 1 inch pieces
  • 3 cups of panko bread crumbs
  • 2 tsp salt
  • 2 eggs
  • 1/2 cup flour
  • Sauce-
  • 3 tablespoon soy sauce
  • 3 tablespoon water
  • 8 tablespoon Agave syrup
  • 10 tablespoons rice vinegar (can substitute with white vinegar)
  • 2 teaspoon minced garlic
  • 1/2 cup thinly sliced green onions
  • 2 tablespoon minced or finely grated ginger
  • 2 tablespoon cornstarch
  • Zest of once medium-large orange
  • 2 teaspoon of sesame oil
  • 3-4 tablespoon of toasted sesame seeds (optional)
  • 1 tablespoon canola oil
Instructions
  1. Preheat oven to 375 degrees. Spray baking sheet with cooking spray. Mix together flour and salt in a bowl. Lightly beat the eggs in their own bowl. Place bread crumbs in a separate bowl. Lightly coat chicken pieces in flour. Dip chicken in egg mixture until covered. Toss chicken in bread crumbs until evenly coated. Places chicken pieces on cookie sheet in a single layer. Bake for about 20 minutes. (they should get lightly browned)
  2. While chicken is baking, in a medium size bowl, mix together soy sauce, vinegar, and agave syrup. Place canola oil in skillet over medium heat. Add ginger and garlic and cook for about 2-3 minutes being sure not to burn. Add green onions and orange zest cook until soft (about 60 seconds). Add soy sauce mixture and cook over medium heat (stirring frequently) for about 3-5 minutes. Mix together corn starch and water in a separate bowl then add to sauce pan. Stir until thick. Mix in sesame oil just before serving.
  3. Remove baked chicken from the oven and place on platter. Drizzle with orange sauce and sprinkle with toasted sesame seeds.
  4. Serve with your favorite sides. We chose rice and asian slaw. Enjoy!

Fries To Keep Away the Vamps…

I LOVE a good fry.  And since starting Weight Watchers and losing over 40lbs (so far) I typically shy away from them. (well except certain times of the month when I just want to slurp up bacon grease and roll around in butter)  So I decided I should try to make baked french fries that were crispy, flavorful, and delicious.  I’m not sure if you have ever made baked fries… but it isn’t always possible.

I was playing around in the kitchen yesterday and invented (what I consider to be) the BEST baked fry in existence. (And thanks to the garlic content you don’t have to worry about those pesky teenage vampires bothering you.)

Baked Rosemary Garlic French Fries Recipe

 

 

Ingredients-

  • 4-5 medium russet potatoes washed and sliced into desired thickness (I made mine about 3/4 inch)
  • 4 tablespoons of extra virgin olive oil
  • 2 tsp sea salt
  • 1-2 tablespoons of rosemary (fresh or dried)
  • 4-5 cloves of garlic crushed or finely minced

 

 

 

Instructions-

  • Preheat oven to 425 degrees
  • Toss sliced potatoes with olive oil, garlic, and rosemary
  • Arrange fries in a single layer on a baking pan (I try to get all the extra garlic and rosemary in the bowl and spread across the fries)
  • Sprinkle with sea salt
  • Bake for 35-45 minutes depending on the thickness of your fries (turn once during baking) until golden brown
  • Serve with your favorite dipping sauce.

 

 

Shake, Shake, Shake It Up With Lemon Garlic Chicken Recipe

A couple days ago you may have read about my new bloggy bling on my sidebar.  Today I am introducing you the wonderful world you find by clicking on that button.  Give Every Night  New Flavor  is brought to you Conagra Foods and your local Kroger Stores.  Today I am showing you a glimpse of what you can create using this site as your blueprint.

Lemon Garlic Chicken Recipe

Ingredients:

  • 1/2 cup italian style bread crumbs
  • 1/2 teaspoon garlic salt (I used garlic powder)
  • 1 teaspoon lemon pepper
  • 1/4 cup lemon juice
  • 2 tablespoons Wesson Canola Oil
  • 4 boneless, skinless chicken breasts (I beat mine flat a little to tenderize.  To the tune of Yankee Doodle of course.)
  • Pam No-Stick Cooking Spray

  1. Preheat oven to 375°F. Spray shallow baking pan with cooking spray. Combine bread crumbs, garlic salt and lemon pepper in recloseable food storage bag. Combine lemon juice and oil in another recloseable food storage bag.
  2. Add chicken to bag with lemon juice mixture; toss to coat. Place each breast in bag with crumb mixture; shake to coat. Place coated chicken in single layer in baking pan. Sprinkle any remaining crumbs over chicken, if desired.
  3. Spray tops of chicken with cooking spray. Bake 20 to 25 minutes or until chicken is no longer pink in centers (165°F).

It’s also advisable to question your child’s ability to shake things.  It looks more like a squeeze than a shake to me.  I think a dictionary and a YouTube video on how to shake may be in order. 

Serve cooked chicken with your favorite side dish.  I of course went the asparagus…. because everything’s better with asparagus.  (except maybe pee… but that is another story)

I’m glad the chicken squeezing didn’t traumatize them too much.  Since they both couldn’t keep their mouths empty.

Cook With Your Kids-Peanut Butter Chocolate Chunk Cookies

I am just a baking fool lately.  And when I was given the opportunity to “Cook With Your Kids” (side note-your kids meaning my kids.  I didn’t come and steal your kids to bake with them.  I guess I could if you wanted me to but then it wouldn’t really be stealing.)  and give the goodies a neighborhood family in need I couldn’t pass up the chance. 

My favorite store to pick up baking supplies is Walmart.  Not only because they have some of the best prices around but because they carry all the ConAgra products I love.  I already had most of the ingredients necessary to make my Peanut Butter Chocolate Chunk Cookie recipe.  Well except the peanut butter and chocolate chunks.  So, you know, I was missing the most important stuff.  Walmart didn’t fail me and had both products I needed for a killer deal!
