It’s Turkey Time!!!

Thanks for visiting Fakesgiving Week!  Enjoy some other recipes like cranberries or sausage and mushroom stuffing.

I was going to title this post “How To Roast A Perfect Turkey” but I didn’t want to create envy among all the roasted turkeys turkeys out there.  So instead I will just give you a brief written and video (where I may or may not use the word spatchcock) recipe on how to roast a turkey. And by “brief” I mean lengthy and possibly coma inducing.  Truly, this will give you a tender, juicy, and amazeballs turkey every time… Be it Thanksgiving or Christmas.

For reals… It is pretty perfect isn’t it?  I only wish the lighting was a bit better.

Roasted Turkey

A quick and simple recipe to roast a moist and juicy turkey.
Ingredients
  • 12-14 lb Turkey
  • 2 carrots (washed and cut in half)
  • 2 celery stalks (washed and cut in half)
  • 1 1/2 large onions (quartered)
  • 4 cloves of garlic
  • 3 bay leaves
  • 2 tsp salt
  • 1 tsp pepper
  • Paprika
  • 1 1/2 cups poultry broth
  • Browning liquid
  • Butcher string for trussing
Instructions
  1. Watch video tutorial for full instructions
  2. Pre-heat turkey roaster to 350 degrees with about 1 cup of broth.
  3. Remove gizzards and neck from turkey and set aside (can use for gravy). Rinse inside and out of turkey with cool water and pat dry. Place turkey on a clean cutting board.
  4. Sprinkle salt and pepper in the chest cavity of the turkey
  5. Place 3 pieces of carrot, 4 quarters of onion, 3 pieces of celery, 2 bay leaves, 3 cloves of garlic in chest cavity of turkey. Place remaining celery, onion, bay leaf, and garlic in small turkey cavity
  6. Truss turkey (watch video)
  7. Evenly coat exterior of turkey with browning liquid, sprinkle with paprika, salt and pepper.
  8. Optional-Inject turkey with garlic and onion infused chicken broth paying special attention to the white meat.
  9. Place turkey in roaster. Cover and roast for about 12-13 minutes per lb. 2.5-3 hours or until internal temperature reaches 180 degrees.
  10. Remove turkey and let set for about 20 minutes.
  11. Carve and enjoy.

Sausage and Mushroom Stuffing Recipe

As you saw earlier this week we are wild for berries… Cranberries.   But Thanksgiving dinner can’t only consist of fine berry side dishes.  You have to have something a little more filling.  That is where my sausage and mushroom stuffing comes in handy.  This recipe is tried and tested over many years and it is always requested for Thanksgiving and Christmans dinners.  And let’s be honest… Food is just better anytime you add pig to the equation.

Sausage and Mushroom Stuffing Recipe

This stuffing is a perfect compliment to any Thanksgiving or Christmas dinner.
Ingredients
  • 1lb ground sausage (pork, chicken, or turkey)
  • 3 cups sliced mushrooms (I use baby portabella)
  • 1 large onion (finely chopped)
  • 4 cloves garlic (minced)
  • 6 whole wheat ciabatta rolls (cubed)
  • 1 cup grated carrot
  • 1 1/2 cups celery (chopped)
  • 2 cups broth (chicken or turkey)
  • 1 tablespoond dried sage.
Instructions
  1. Dry cubed bread over night.
  2. Pre-heat oven to 350 degrees.
  3. Brown sausage in a non-stick skillet (do not drain). Add veggies and saute until tender.
  4. Mix sausage/veggie mixture, dried bread cubes, and sage in a large bowl.
  5. Slowy add broth and mix until evenly moist (you may not have to use all the broth)
  6. Transfer into baking dish that has been coated with non-stick cooking spray.
  7. Bake uncovered for about 30 minutes or until lightly brown.

Easy Cranberry Sauce Recipe

I have a confession… I am a food snob.  It’s true.  I am not super snobby… I pretty much can’t survive without McDonald’s Diet Coke.  And who doesn’t love a chicken nugget now and then?  But when it comes to certain things… homemade is best.  Cranberry sauce is one of them. In fact, until I married Brian, I never realized that people bought canned cranberries… Especially considering how simple and EASY the recipe is.  Plus, it looks and tastes so much better.  It has to be one of our favorite Thanksgiving side dishes.

Easy Cranberry Sauce Recipe

An easy recipe for everyone’s favorite Thanksgiving side dish.
Ingredients
  • 3 cups (1 package) fresh cranberries
  • 1 cup water
  • 1 cup sugar
Instructions
  1. In medium sized sauce pan bring water and sugar to a boil.
  2. Lower heat to medium and boil for about 5 minutes.
  3. Add cranberries and bring back to a slow boil.
  4. Boil for an additional 5 minutes stirring frequently.
  5. Remove from heat and cool for 30-40 minutes before placing in serving dish. Continue cooling to room temperature, cover, and place in fridge to cool prior to serving.
Notes

Perfect to prepare the day before. Add the rind of one orange for a great variation.

It’s a soup that tastes like a taco… Awesome and confusing.

Dear recipes and soup.  I can’t quit you.  I am still waiting for my kids to accidentally swallow a marble or for my husband to shave off his right eyebrow, just for some good blog material.  At this point I would even accept him shaving off his LEFT eyebrow.  But until they get on it… You will just have to suffer through me posting recipes.  Today I am sharing a quick and EASY family favorite.  Taco Soup… Perfect for taco Tuesday or soup Saturday… Or even Wednesday if you want to get really wild.

One thing I really love about this taco soup recipe is how easy it is to adapt for your slow cooker or CrockPot.

Easy Taco Soup Recipe

Ingredients
  • 1lb ground turkey
  • 7 cups of assorted beans (canned or pre-cooked, rinsed and drained) I used kidney, garbanzo, black, and red beans.
  • 1 3/4 cups of corn (frozen or canned)
  • 1 large onion (chopped)
  • 4 cloves of garlic (minced)
  • 1/4 cup diced green chilis
  • 1/2 cup taco seasoning (homemade or store bought)
  • 1/4 cup dry ranch dressing mix (homemade or store bought)
  • 28 oz can of diced tomatoes
  • 4 cups of water
  • 3 cups of stock (beef or chicken)
  • Optional toppings: Tortilla chips, sliced olives, grated cheese, sour cream, guacamole
Instructions
  1. Brown ground turkey in a medium sized stock pot. (drain excess liquid)
  2. Add onions and garlic. Cook until soft.
  3. Add remaining ingredients and stir well.
  4. Bring to a boil then reduce heat to create a slow simmer.
  5. Cook 20-30 minutes and serve.
Notes

This recipe is easily adapted to your slow cooker. Just follow the first 2 instructions and then add all the ingredients to your slow cooker. Cook on low for about 4 hours.

How do you like THESE apples???

Tonight I noticed that a lot of my recent posts are food or recipe related.  Maybe it’s because I love to cook when the weather cools down.  Or maybe it’s because I have lost my ability to mock my family.  I shudder at the thought… I am ruining my kids chance at needing a therapist in the future.  What is WRONG with me?  Well tonight’s post isn’t going to help any… It’s an apple crisp recipe.

My little sister’s watched my dog last weekend.  Which means my Mom sent me home with a huge basket of apples from her tree.  What does one do with all those apples?  Well I made dessert… Because God created cinnamon and sugar expressly for the purpose of making apples awesome.  What?  It’s true… I am sure I heard that in church once.   So basically my dessert was a gift from heaven.  And if you have ever had Apple Crisp a’la mode… You know I am totally right.

My apple crisp recipe is quick, easy, and pretty much fool proof.  Trust me… I know fools.

Forgive the photo… when the sun sets at 5pm I am a slave to crappy light bulbs.

Easy Apple Crisp Recipe

A quick and easy dessert that turns apples into a delicious treat.
Ingredients
  • 4 medium apples (peeled, cored, and sliced)
  • 1/2 cup oats
  • 1/2 cup flour
  • 3/4 cup brown sugar
  • 1/3 cup butter (softened)
  • 3/4 tsp cinnamon
  • 1/2 tsp nutmeg
  • 8×8 baking pan coated with cooking spray
Instructions
  1. Pre-heat oven to 375 degrees.
  2. Evenly spread apples in bottom of greased baking pan.
  3. Mix remaining ingredients in bowl until completely mixed and crumbly.
  4. Sprinkle evenly over the top of apples.
  5. Bake for 30 minutes or until top is brown and apples are fork tender.
Notes

Best if served warm with scoop of vanilla bean ice cream.

Tortellini Soup Recipe #GourmetCreations #cbias

The only good thing about the weather turning cold??? SOUP!  I seriously adore making soup and in the summer it is just too hot.  In fact, I have soup on the menu 3 times in the next 7 days.  That is how much I really love soup.  I decided to share my Tortellini Soup Recipe with you while showcasing Hillshire Farm Gourmet Creations Sweet Italian Style Sausage.  Because the first few cold days of Fall are the perfect occasion to serve your family a tasty hot meal… I mean besides Thursketti.

Tortellini Soup Recipe

Delicious and hearty Italian style soup recipe that everyone in your family will enjoy.
Ingredients
  • 12 oz package of Hillshire Farm Gourmet Creations Sweet Italian Style sausage (sliced lengthwise and then thinly across)
  • 1 1/2 cups sliced zucchini (thick julienne)
  • 1 1/2 cups julienned carrots
  • 1 large onion diced
  • 3 cloves of garlic minced
  • 3 cups fresh spinach chopped
  • 6 cups of chicken broth
  • 28 oz can diced tomatoes
  • 2 cups water
  • 1 1/2 tbsp basil (dried)
  • 2 tsp oregano (dried)
  • 1 tsp ground black pepper
  • salt to taste
  • 1 1/2 tbsp olive oil
  • 24 oz of fresh tortellini
Instructions
  1. In large stock pot heat olive oil over medium-high heat. Add sausage and lightly brown.
  2. Add onions and garlic. Cook until soft. Stirring frequently to avoid burning.
  3. Add remaining vegetables and saute until spinach wilts.
  4. Add water, broth, tomatoes, and spices. Bring to a boil.
  5. Add tortellini and cook for about 8 minutes (or package instructions). Reduce heat to medium while cooking. Do not overcook. Remove from heat.
  6. Serve topped with your favorite Italian style cheese and enjoy.

Tortellini Soup Instructions

Wash and chop all veggies.

Halve and thinly slice Hillshire Farm Gourmet Creations Sweet Italian Style Sausage.  I love that you can actually see the peppers inside of the sausage… It isn’t a mystery what’s really in there.

Lightly brown sausage in olive oil over medium-high heat.  Since the sausage is already cooked it’s quick and easy.

Add onions and garlic saute until soft. (stir frequently to avoid burning)

Add remaining veggies and saute until spinach is wilted.

Add broth, water, tomatoes, and spices.  Stir well and bring to a boil.  Add fresh tortellini and cook for about 8 minutes (or according to package instructions)  Be sure to NOT overcook the pasta.  Remove from heat and serve.

Top with grated Italian style cheese.  Don’t forget a side of warm fresh bread.

Spooktacular Halloween Party Recipes

Like I said yesterday… I LOVE the Halloween season.  So I have dubbed this week “The Week of Halloween” on my blog.  Today I wanted to share a couple of the creepiest, spooky, festive, and yummy Halloween party recipes I served my guests this weekend.

Zombie Punch Recipe-A delicious beverage that goblins and ghouls of all ages will enjoy!

Ingredients-

  • 1/2 gallon limeade
  • 2 liters lemon-lime soda
  • 1/2 gallon lime sherbet

Directions: Add limeade and soda to large punch bowl.  Add sherbet by the scoop.  When the mixture starts to foam it is ready to serve to all of your ghostly guests.  (Serves about 20)

Halloween Rice Krispie Treats Recipe- Snap, crackle, and pop your way into a festive Halloween treat.

Ingredients-

  • 3 tablespoons of butter (butter works best)
  • 1 package of mini marshmallows (melts quicker)
  • 4 cups of Rice Krispies or applicable generic substitution
  • 2 cups of Cocoa Krispies
  • 12 drops of red food coloring
  • 8 drops of yellow food coloring

Directions-Over medium-low heat melt butter.  Add the marshmallows and stir frequently (I always spray the stirring spoon with some non-stick cooking spray) Coat 13×9 pan with non-stick cooking spray.  When marshmallow mixture is completely melted add food coloring and mix well.  (You can adjust your orange coloring by adding more red or yellow) Remove from heat and gently mix in cereal until thoroughly coated with marshmallow mixture.  Scrape into greased 13×9 pan.  Use a spatula (coated with non-stick spray) to spread and flatten mixture.  Cool before cutting into squares.  (Serves 1-20… if you want to share.)

Bulging Zombie Eyeballs aka Halloween Meatball Recipe-What says gross more than a zombie eyeball on a stick?  Thankfully they taste delicious.

Ingredients-

  • 40-50 prepared/cooked meatballs (you can make them or buy them)
  • 1 2/3 cups of grape jam
  • 1 bottle of chili sauce
  • Green olives (stuffed with pimentos work best)
  • Toothpicks

Directions-Mix together chili sauce and jam until smooth.  Place prepared meatballs in crock-pot.  Pour sauce over meatballs.  Cook on low for about 2 hours.  Place meatballs on platter.  Use toothpick and poke through the center of an olive (You can use a half olive if you want the eyes to be less “bulgy”) and poke into meatball to secure.  Repeat until done.  Drizzle the extra sauce over the meatballs for an oozing effect.
